Kolshi
अन्नम् (Annam) आहारम् (Aaharam) खाद्यम् (Khaadyam)… Food; our ancestors got their food a long long time ago by hunting, gathering, and fishing, till farming emerged and civilization evolved.
And then circa 2022 CE  Kolshi happened…
Chanakya, the great philosopher, economist, who wrote Arthashastra also advised on health and what nutritious food to eat. Nearly two thousand three hundred years ago, he wrote that a balanced diet should be of one prastha of rice, quarter prastha of lentils, 1/62 prastha of salt, and 1/16 prastha of Ghee or Oil. Does it sound like one of the sumptuous delicacies familiar in our menu palette! And for those who are wondering what is prastha? It is about 635 grams or 1.4 pounds.
The Egyptian civilization also tasted a dish of rice, lentils & other ingredients which today evolved as Koshary. It then crossed the ocean and in Britain it became Kedgeree. Coming back to our subcontinent, the ancient Tamilian delicieux Ven Pongal is another water mouthwatering dish, and traveling north to the Himalayas the Himachali with Sabut Urad Dal blooms it into Urad Dal Khichdi.
